In the Midwest we use disposers in our sinks that grind up compost where it is sent to the treatment plant then sold as compost. In the Western states they send heavy duty trucks around to collect food waste and make compost. Apparently west coasters don't trust pipes and gravity to deliver their compost. Not really a surprise though given the Democrat politics California, of course they rank 47th out of 50 in science education in the nation.
